Sniping generally refers to two different tactics. The most common is noble sniping. To do this, you send troops to your village that is under attack and you time them to land after the initial clearing attacks but sometime before the las noble hits. By killing the last one or two nobles in an attack you prevent the attacker from fully nobling your village with a minimal loss of troops to yourself.
The second sniping tactic would be village sniping. To do this, you time a noble or two of your own to hit just after the last nobles from your attacker hit the village. This way, after your attacker has nobled the village from you, you noble it right back from him. On packet worlds, this attack is often combined with pre-nobling, which means to noble your village's loyalty down yourself prior to the attacks. You do this so the attacker nobles the village more than once, costing him troops and, more importantly, nobles that have to be rebuilt at full cost. This tactic isn't as effective in a coin world, but can still be done.
