Nobles/Academy?

I was wondering how exactly nobeling and academies work once I get one... Are there any other requirements besides the supplies for the noblemen, and the building requirements?

And once you have a nobleman, how do you take other villages? And also, if you attack an abandoned village, do you automatically take it?
