Okay, so I have to build troops to take other villages, I chose to build lots of spears as they have long pointy thingys to attack the axemen with when I attack.
Let me know if this is right. Attack with spears?

Only if it's defended with light cavalery!
Or if there are trenches they could use their spears to jump across. So basically it depends upon the area of the village you wish to attack.

But it's always better to send mixed nukes, that way you're certain that no matter what's in the village you'll always have some troops who were trained specifically to kill those.

Okay so let me get this straight, I need to send a mixture of spears, swords, axes, L/C, scouts, H/C and some rams with cats?
Are rams any good? they seem to take up a heap of space. I decided to make 200 in one village and they are all over the place. You can't walk around the village and we've got them stacked on top of each other and even outside the walls. Damn things are so big...

You mean you're actually building walls? Why would you do that? IF under attack, that will be the first thing the enemy looks at (to knock them down). So, better to have the headstart and surprise him by not building any. I have plenty more good reasons why you shouldn't.
1. they are going to go down anyway eventually when you're under attack, so what's the use? Sounds like waste of time and resources... Not to mention the builders who worked their butts off for nothing.
2. my village is much spacier without them (and the view is great too!)
3. I don't need to stack the rams on top of each other, there's plenty of space now ouside the city (well, of course one could argue there's no outside/inside when you don't have any walls - that's a valid point too)
4. with the resources I saved from NOT building walls, I usually choose to build taverns instead. It keeps morale high (important during war time) and as long as there's enough beer, men won't worry whether there are walls around the village or not.

So how do you uses catapults? I got some guy to build one but he had nothing to fire, so he grabbed my dog and tried to launch him over the wall. Problem was that the guy building the walls did such a good job that the dog slammed into it halfway up.
I think I need to get a new guy working on the cats and possibly forget about building walls like you said.

Simple as that. You can quote me on that one if you wish. I usually let my wife catapult beer from my place when I'm hunting with the guys up in the mountains. Works wonderfully well. Don't use bottles though! They break rather easily...
